While I use and like the heat gun method, there is a point to water.
My example is on the very thin range of wood.
I built some hand holds on a Kayak that required very thin woods to survive the bend.
Thicker strips soaked with a hand held spray bottle made the bend easily. Yes they did need to set overnight to dry.
But trying to heat the thin wood with the heat gun just failed, the wood cooled off too fast and I toasted my fingers every time.

Water with no heat worked dramatically.
1/2" laminate with 10 plies

Yes I didn't have to build these this way, I was trying to match the cockpit ring in the laminate.
