The first yost kayak I built I lashed, pegged and used epoxy. Since then I've been just lashing, it's very strong. Think about it, 70# test wrapped 4 or 5 times around two pieces of wood stretched tight after every turn. The sinew I use is basically flat when I pull it tight it lays so flat you don't see any bumps through the fabric (no need to slot the chines). Also, the lashing does not have to be stopped at every joint, I tie off one end start lashing a joint and then procede to the next joint, all the way down the stringer.

I peg the gunwales and keel only.

With a SOF I think you want the joints not to be ridgid that way an impact gets distributed across many joints and stringers that way you're less likely to break a stringer.
