I went with the Yost-style, double-ringed coaming and it worked out fine. I stapled the skin to the topside of the bottom ring - instead of wrapping the skin under the ring and stapling underneath. Then I ran a bead of Marine Goop on top of that and then screwed the top ring to the bottom. I put the screws up through the bottom and into the top. This way they are hidden from view.

Make sure you use stainless steel staples - especially if you are leaving them exposed to the water. I probably could've use regular ones as my staples and completely sealed from the water by being sandwiched between the rings in a bed of Goop

I'm 6'3" and 195 lb so I guess I'm not a lightweight paddler either.
