The 1/8" if it has an arc to it will be fine all by itself, used flat it'll probably still work but be bouncy and the hatches may leak a bit more.

If the thinner ply would be lighter with a glass layer than the thicker will depend almost entirely on the skill of the person doing the glassing. Wood is much lighter than epoxy, so if you can put the the glass on with very little epoxy, it might be a little lighter.
