Charles-
A couple of cautions:
IMO, it will be a tricky job to sand that mahogany ply enough to 'refresh' the color without sanding through the surface veneer.
Since the plywood was 'saturated' to some small depth with epoxy, it may be difficult to get an even color result, with or without stain.
Make sure that you use a light-fast stain- some fade badly in sunlight.
Also, be sure to do some adhesion tests with your planned stain, as some can compromise the bond between the wood and epoxy.

You could start the project on the hull; if it doesn't work out you could paint it.
