I don't think I'd worry about getting them trapped, if you used a standard keyhole cockpit, it's nearly as long as the average 3 year old is if they layed down in the cockpit, let alone sitting upright. Most likely they won't wear a skirt, you'd almost have to buy one a year to keep up with their growth :)

If they managed to get the boat over, a big if, they'd just fall out, same as in a canoe.

Canoe's actually much less stable for kids, they can sit on the gunwales which will roll the average canoe. Uncomfy sitting with the coaming digging into your legs to do the same thing on a kayak.
