Canoe Rig: The Essence and the Art : Sailpower for Antique and Traditional Canoes by Todd E. Bradshaw

This book is about rigging a canoe for sailing. It covers different types of sails, making sails, making and mounting leeboards, centerboards, rudders, outriggers and adapting your boat to mount the hardware. It doesn't get down into detailed plans much. It's more of an overview but does give you some idea of what you need to achieve. For example- for a skinny boat, you want a wide, low sail plan. Not a tall skinny wing.
While it's not specifically a kayak book, it should apply.

I've seen sailing canoes discussed on the woodenboat.com forum several times. The author of the book mentioned above is active on woodenboat forum.
