I doubt that the skin would pose any problems at all, the trick as mentioned will be attaching the transducer to the skin. I think I'd try the silicone mount, basically a giant blob of silicone squirted onto the hull that the transducer is set into. It's transparent to the signal from the transducer so that's not a problem, have to use care as mentioned with the epoxy method to not get bubbles in it. But the silicone will give where the epoxy won't with hull flexing so might work a bit better.
