Here is the link to Pavia Lumholt's website on installing bulkheads into a SOF kayak. I'm sure you'll be able to adapt this to a Yostie PVC skin. I would glue the PVC bulkhead to the PVC skin with the same nasty glue that Tom recommends, and then probably Aquaseal the PVC bulkhead to the stringers. (I have no idea what that red goop is he's using to seal up the bulkheads.)

Or, I'd just look through back issues of the Masik from QajaqUSA and make a sea sock.

Although, de-watering a SOF in waist deep water when learning to roll isn't that big a deal, so I'd probably skip the sea sock unless paddling in rougher stuff. Sea socks + float bags seem to be the rough condition consensus over on QajaqUSA's forums.
