I have built several kayaks using 3mm ply. I am quite happy with the light weight and I'm satisfied that those kayaks are plenty strong enough.

To keep the weight down and strength up I apply 6oz glass to the inside surface of the bottom panels before assembling the hull. This adds significantly to the strength and also lets you control the epoxy on a flat surface and keeps you from adding weight where the epoxy sags to the bottom of the hull. The sides only get epoxy on the inside.

My Night Heron hybrid comes in around 35 lbs complete and is a hoot to paddle.
