As an avid woodworking and amateur furniture maker I would save the mahogany for something that would show. It would be a shame to hide a pretty wood like that. Even though it should work just fine.

And one of the best thing about SOF boats is the light weight. The amount of wood to build one is so small the cost is minimal to buy a better suited board for the boat. So I say keep the mahogany and go buy something.
