I'm not familiar with the Shearwater instructions. So the concern may be that you had peanut butter (or spun honey, whatever that is) consistency rather than ketchup and therefore it may not be strong enough? I doubt if that will be a problem. Your epoxy should still cure hard. But some additives (I'm not familiar with the one you mention) improve the ability to sand the cured epoxy mixture. While that may not make your epoxy fillet the strongest, I doubt if it will be a problem. As you mention, it will be receiving glass over the coaming yet and that will contribute a lot of strength.

The thin film areas dried rather dry because a lot of the epoxy soaked into the wood. In the main fillet, I don't think that will be such a problem.

Just my 2 cents. I think you will be fine.
