Two things, I'd love to see this boat completed, have thought about the same thing. Two though, I'm not sure a hard chine (S&G is gonna be hard chine) will be competitive racing against round bottom boats. The water has to make a break around the chine and this adds resistance. Might not be much, but it could be enough to mean it's not competitive.
