you can buy long enough SS rivets to do the job but I agree with others that for sure you will crush the wood unless you make an oversize hole and refill it with epoxy. I also agree with Etienne, why not use bolts? then if you want to change the fitting or remove it for re-varnishing, you can easily do so. Removing SS pop rivets is not fun. if you are worried about dealing with nuts that will be out of reach near the bow and stern, there is a way of dealing with that (epoxy them in place using vaseline to protect the threads etc etc).
