: When I did mine, I used three inch thick minicell, and cut it to shape. since
: the hull shape is angular, it was pretty easy to shape correctly.

And you'll probably get a lot of "spring-up" if you don't.

: Run a batten from the chine to the chine, then measure from the batten to the
: bottom of the hull. measure up from the bottom of the foam by this
: distance and mark it along both sides of the foam. then you cut from this
: mark, to the centerline of the bottom of the foam.

Nice.

: The only problem that I have with my seat is that is does not extend far
: enough forward under my legs, and will put my feet asleep within about a
: half hour or so.

If your foam is long enough, cut new notches for your hip pads, and carve the butt dimple farther back in the minicell.

If the foam isn't long enough, it's easy to glue another log of minicell to the front of your seat and make your seat longer under the thighs. I found this makes a huge difference in paddling comfort. I went from a seat that made me numb in 45 minutes to one I could sit in for 8 hours.
