I've been thinking this exact same technique over lately with the same dilemma. How well would this work? Leave some excess (3-5cm) on one of the joint surfaces, then sandwich a rubber gasket between the two coroplast surfaces. To tighten down on the gasket, drill (or punch or whatever) through the sandwich and insert a nylon stove bolt. The nut and another rubber washer would be on the inside of the kayak. The spacing would have to be experimental, but easy to add supplemental bolts as needed.
