Material: Fiberglassing Over Wet Epoxy

Lately I've been glassing a lot of small items like hatch covers, hatch catches, rudder parts... I wet out the item with epoxy and then lay the dry fabric on top. The first time I read about this technique, I thought it sounded like a nightmare but (for these items) it's a really convenient way to control how much epoxy goes down, control floating and bubbles. It's nice because the fabric soaks up the exess epoxy and I simply go around and hit the dry spots where needed.

Anyone use this technique on a larger scale - like on an entire hull?
