First, that is a good looking boat, nice design.

I like to fair with a small sharp block plane taking thin cuts, on the concave areas a spokeshave will work. When it is time to start sanding I use a 1/4" flexible piece of plywood for a fairing board. My board is about 4" wide by 14" long with a handle/knob on each end. I contac cement 60/80 grit paper to it for fairing. A light sanding with 120 and ROS will finish.

Harder the wood the longer it takes, until you either get it smooth or get tired of sanding.
