I have the Mill Creek 16 and use a 35 SqFt polytarp lugsail. The K2 rudder is plenty for this. One problem with adding rudder area is that rudders generate amazing amounts of torsional force at the mounting point. In higher performance home-modified sailboats I have managed to tear slots in the transom with an efficient rudder (before I built a spreader-gudgeon). If you have balance problems that overwhelm the K2 rudder, try trimming the relative location of the leeboard and the center-of-effort of the sail.
