Neil,
It will not effect the normal buoyancy of the craft in the least. That is.. as long as it doesn't flood as in rolling over and filling the cockpit with water. I would carefully remove just enough of the foam to allow my feet to fit comfortably and use it for the foot brace. Also, as a noob, kayak with a partner that can show you the proper technique and safe kayaking habits.
