Interestingly, not far down the messages, Patrick asked "Why does my boat weight a ton?" One thing I mentioned is worth repeating. It's easy to thing "strength" when you building. It's harder to think "weight."

You pick up a yard or two of cloth, it doesn't weigh hardly anything. You mix up a few squirts of epoxy, it doesn't weigh hardly anything. Every time you do that it makes the kayak stronger and it doesn't weigh hardly anything. But you do it here, you do it there, and a little more over here and the next thing you know you have a heavy kayak.

Honestly, I think you're slightly over-thinking the glass/epoxy layup (and I've read some posts here that go completely overboard in that department). For instance, I don't think I would double up inside the cockpit.

Don't take offense, but sometimes less is more.
