My brother and I each built a CLC Chesapeake 17 at the same time. By cutting the panels for 2 boats' hulls, we did some re-arranging and got everything out of 3 panels rather than 4. We used Okoume for the hulls. We used doorskins for the deck. We scrimped on the non-structural part and went with quality where it really counts (IMHO), for our safety's sake. Look around for a lower priced epoxy (make sure it is not CHEAP, though!) You can save up to $50-100 here. All told, we paid about $425 for each boat.
