How about something like the CLC Mill Creek or Pocomoke? They have huge open cockpits where you can move the seats around. Most people would probably call them decked canoes, because they are kind of a cross between a canoe and a kayak. The folding kayak companies(feather craft, ect.) also make some boats in this style. They dont roll very well, but as long as you plan to stay up-right they make a good recreational craft.
