What I did was to sit with my back against a wall, and measure to my feet while sitting with the legs out flat and the toes forward. Then add about 6" to that, for wiggle room. Plus whatever you think in case taller folks want to play with your boat. Use the cockpit rear coaming as a reference starting point.

I also like to have a little room behind the seat to put a paddle float, possibly a pump, and a small day pack. But that's a personal preference, and it adds to the amount of water one must bail or pump out of the cockpit.
