If I recall, I didn't have perfect setup on my forms and there was slight but noticable wavers in the stapled down cedar strips. When the glue is set and the staples removed, the hull and deck shape relaxed and settled into the curves dictated by their innate flexibility. I wouldn't get too upset over these slight deviations from the idealized curves you're not seeing.
