When I was in the USAF we would stock pre-preg in a freezer (Freezer only used for fiberglass products and potting compounds) for many months at a time. There was a shelf life on it, but I don't remember how long was acceptable. This has been done for many years in the aerospace industry. That's how they use prepreg without having it cure before it can be used.

I would contact the manufacturer to see how long it can be stored at the temperature of your freezer.
