Interesting Jim that you bring this up now. I'm building a Georgian Bay using the high deck version. I don't have your height but I do have size 12 feet and with shoes on they are longer than the space in my hull. I naturally stand with my feet splayed out so that is a comfortable position in the boat for me. In Nick Schades book he shows a foot brace that is one piece that is Vee shaped and it mounts in the middle. It would never work for my splayed out feet. My point here is that sit on the floor like you will in the kayak and see how your feet naturally fall as in "in or out" and then see how it will be in your finished boat. You will want to consider all of this very carefully when deciding on foot peg layout and mounting.
