Oh, I thought they were just ordinary gaps between strips, say in the flat sections. The strips at the ends can be a real pain when you're trying to twist them and glue them in place. I haven't used cove and bead (I hand plane and sand all of my strips), but I can see how the extra flange of the cove piece would get in the way on a curve.

It is a lot of fun. Too bad all of the other projects around the house have to get neglected once the kayak building starts.
