I've used Interlux Interthane Plus Clear, a similar product I believe, because I like the good compatibility with epoxy and abrasion resistant finish. I've just used one coat because I want to keep my craft light for racing and the stuff is tricky and expensive. seems to be okay though I'm sure at least two coats would be better if uv protection is your primary goal. I keep my boats under cover unless in the water being used, to avoid the sun.
