I think You will find that the scroll saw is much too light to do any of the work on the kayaks. Maybe some trimming on the strips, but remember that you are working with some very long pieces and will be difficult to handle on the small table. Veneer work is definitely up it's alley. You won't do much of that work on a band saw either. You can rip your strips with the bandsaw provided you have long enough infeed and outfeed tables, and an adequate fence. Hope that helps.
