This forum is pretty hard to beat as far as strip building technical info is concerned. The folks at Bear Mountain are very knowledgeable as well. Ted Moores has been strip building for a long time and has a reputation for very fine work. His book Canoecraft is a good one, and includes offsets for several canoe designs.
Also, Mac Mcarthy has a very nice little book on construction of double-paddle
cedar stripped canoes. His instructions are clear and simple. He has the measurements to make your own molds for two different canoes; the 11.5' Wee Lassie or the 13.5' Wee Lassie II. The patterns are easy to draw from the book. He used a simplified "table of offsets" for his patterns. He also sells the patterns for only $20.00. These boats are very easily driven and lightweight, and since you are in the bottom of the boat, they are ultimately quite stable. Being small, these boats can be built fairly quickly. There is a
Mac has a web site:
www.feathercanoes.com
He does not have a forum, but he is a very nice man. BTW.......I get his newsletter and for the last two years, there has been a high school shop class in FL that has built a Wee Lassie and then auctioned it off.......both years they raised around $10,000! Pretty cool
Check the local library system........"Canoecraft" just might be there.
good luck
As an additional note: Woodenboat magazine has a very active and very good forum. You might check into building a more traditional canoe....it would get you away from the hazards of epoxy/'glass in the high school shop (though it does not sound like this is a problem for you).
