I use Z-Spar Captains varnish as recommended by System Three. I've used Schooner before and didn't have any appearent problems. After trying many, MANY different finishes including water base and two part horrors, I have settled with Captain's varnish. I like the brushing character of it and it is just great.

If you bought the Schooner and must use it, I'd try it on a small 6" square inside the boat if you can. If your shop is at a constant 70 degrees for 12 hours the finsih should feel dry. After 24 you should be able to sand with 220 and not have the paper clog. If it's clogging the finish has not set up properly.
