Varnishing & Sanding

Greeting from the Midwest -- After finishing my Merganser in May, it's time to get it varnished (I've be trying to avoid this step) and stored for the winter. I've started with the hatch covers, using Spidey's rag method. First coat went on well, but my question has to deal with sanding. I sanded that coat with 220 grit on a ROS. (Yes, I realize the ROS is overkill for hatches, but I plan on using it later.) It really seamed to cut through the varnish, and while it was nice and smooth, I'm concerned it's sanding all the varnish away. Need help with the best way to sand between coats of varnish (how much & what grit?). Thanks in advance, Greg
