Why not consider a double?

In a pinch it can be paddled by a single paddler. If you are paddling solo as a rather regular situation, then look at a large single cockpit design, with a seat that can be repositioned when needed.

Unless your fiancee is desperate to do eskimo rolls, a larger open cockpit will not be a problem.

The advantage of a double is that you BOTH contribute to the motive force, so even if she is not a very powerful paddler, she is not at a disadvantage. You both get there at the same time. Against a current or a wind you gain the advantage of twice the power. The alternatives are to travel no faster than the speed of the slowest paddler, and to not travel on days when the conditons are beyond the abilities of the weaker paddler. That can add up to a lot of waiting time.

In a double you are always close enough to chat, too.

Since this will be your second boat it will probably look better than the first, so you can either keep the first as a spare, or sell it off and jsut paddle the prettier boat.

Most doubles can hold enough gear for anywhere from a few days to a couple of weeks of camping -- depending on how you pack and what creature comforts you take with.
