I'm here in Jackson Ms and have similar temp/humidity issues. The only times it has been a problem is during the stripping, the staples tend to rust and stain the hull and when I epoxied outside with no cover. The dew really did a number and blushed the epoxy white. Luckly the 95 Degree sun baked out the blush.
