I think it would be so much easier using wood. How are you going to fasten your forms? Drill and tap the steel? Clamp them? It seem that it would be so much easier to clamp your forms on a wooden strongback and then zip in some drywall screws to keep the forms in place. Remember, the strongback doesn't have to be straight, just rigid. Your going to be working to a string line.
