My friend Cid and I blew up the forms on our computer in all directions by 6% or made it 18/17 bigger to make it an 18 foot kayak. He's currently building it and I'm still a long ways away from starting one. We are both about the same size 6'2", 205lb, size 13 shoe. Not sure how it'll turn out.

Shawn is building one similar, but raised the deck by 1" in the middle tapering toward the ends. Also in construction. Shawn is more like you in height.

You could follow these ideas or you could just buy the plans for the Guillemot L http://www.guillemot-kayaks.com/Building/Guillemot/Guillemot/LargeGuillemot.html

Another idea for someone your size would be to build the Expedition single.

Just some of many possibilities.
