Nate, here is my 2 cents worth. The one-part polyurethanes (briteside) work great. Roll it on and use a brush to tip off (lightly drag the brush along the wet surface to smooth any sags).....it comes out looking like a spray job....and very durable....the solvent wipe down is usually just paint thinner to remove any grease....not a big deal, and won't hurt cured epoxy....

as for the varnish, i'd recommend the one part variety ... there are several good brands....but be certain to use one with a UV shield....any boat store will have it..4 or 5 coats with light sanding between coats...

good luck, and if you goof, just sand it down and try it again.
