I've just designed a 12'x20" kayak for kids up to 100 pounds. Ive marked out the panels and will be assembling them at The Small boat expo In Norwalk Connecticut Next weekend. I'm making it from 3mm okoume but 1/8" Luan would work and be cheaper too.
