Tom, The easiest bending "white" wood is basswood. You can twist it into really complex shapes without a splinter. It doesn't have much of a noticeable grain, which can be good if you want a section of plain light color or a really light colored accent strip. Then, again, without the noticeable grain, you might have to look twice to be sure it is really wood.
