My understanding is that the varnish is there for two reasons.

One: It looks nice, and the more coats you have the "deeper" and better looking the finish becomes.

Two: The UV inhibitors in the varnish protect the epoxy from degradation. Epoxy is UV unstable, and needs the protection or it will weaken. Althouh the thickness of the finish may be sufficient to "look good" it may not be thick enough to protect the epoxy.
