cove and bead

OK, my wet wood finally dried out and I've ripped it into strips. I'm going to start running the cove and bead. I am thinking of using a single router bit to do both cuts. With the bit that I have I will need to pass the strips thru twice to get the bead (one pass on each side of the strip). When it comes to cutting the cove and I leave approx. 1/64 inch on each side of the arc the cove ends up being fairly shallow. How deep should the arc of the cove be?

Also, I am having trouble finding Sitka spruce to make a paddle. What about other kinds of spruce that my local lumber yard has?
