CLC Chesapeake or Chesapeake LT?

I'd say go with the 16. I'm 6'-6", 185 lb. and the Ches. 17 is even a tad "big" for me. Not that I dislike the length, but it handles better with more weight; i.e. more of the hull is pushed deeper into the water. Unless she plans to do a lot of touring with a lot of gear, I'd go with a 16, especially for primarily day-trip use.
