Boatbuilder's Manual by Charlie Walbridge is the only one I know of. It was first published 20 years ago, and the designs shown look a bit dated, but the information is just as valuable now as it was then. It is focused more toward whitewater kayaks, but it has good discussions on fabrics, resins, and layups.

AFAIK, it is out of print, but there are copies floating around that you might find.
