Aircraft dacron in the 3.7 oz range is sometimes used as a very lightweight skin, it is fairly tough for its weight. You can use nylon in various weights with 8oz being the lightest. As far as canvas goes I would not use anything lighter than 14.7oz also known as #10 canvas

As far as coamings why not make an Eastern Arctic type? It has a U shaped front and a flat back. Easy to make and no steaming required.
