I have the standard Therm-A-Rest seat in my Pygmy and it is adequate, no more no less. If you intend to do a lot of camping out of your kayak, this might be a good option since the pad can be removed and used for a seat at the campfire -- it's velcro'd into the boat. I have test-paddled other kayaks with formed seats and have generally found them more comfortable, but I haven't paddled them for long periods.

Once you get the bulk of your kayak done, there are a few tasks that don't take much time to do, but require that you wait until the next day to do the next step. Like the cockpit coaming, hatches, deck rigging, etc. During this period you will get something glued and clamped and won't be able to do more until the next day -- use this bit of extra free time to carve yourself a custom foam seat. By the time the bulk of the boat is done, you'll have more confidence to do it.

I think you'll find the little bit of extra effort worthwhile in the end -- your rear end.
