I have enjoyed your posts and hope you have good luck and good fun with whichever project you undertake. I match your size, (6'4", 240 lbs, size 13 feet, 37' sleeves), and I built Nick's beautiful Guillemot Expedition Single this summer. My butt was _below_ the waterline, air holes _above_ (well, except for one brief episode...) for a week-long salt water trip this summer and I can attest that the boat will carry you just fine. It has the displacement to carry me and my gear, and enough room for me to live in the boat for hours at a time. I _did_ enlarge the cockpit from the original specifications, wider and longer. The boat can fairly be called a cozy fit, but I intend to make it even more garment-like with a proper custom seat, a'la butt mold in sand to fiberglass.

If you are not yet decided on a particular model, and the carrying capacity of the boat is a prominent concern, I can safely say that this boat will do the job. Beyond "doing the job", it is the most beautiful design I have ever seen.
