Given that you are already a woodworker, both stitch-and-glue and strip-built boats will be easy. Just pay attention to this site and gather some good tips for applying the fiberglass cloth and epoxy.

The strip-built kayak will be about twice as time consuming as a stitch-and-glue kayak. If you're new to kayaking, it may be best to build a s-n-g, get used to it, find out your likes and dislikes, what you'd do differently, then build a nice stripper with the features you want. If you're interested in the project more for the woodworking than the paddling, then I'd recommend going straight to the strip-built -- it offers a woodworker more room for creativity and embellishment.
