There was an article in Sea Kayaker Magazine several years back about a guy who built a folding kayak. His used an aluminum frame and hypalon skin, I think -- more of the Feathercraft construction than the Klepper/Nautiraid approach. I recently ordered the back issue from the magazine -- go to their website to get details -- for $6 or so.

If I remember correctly, the article was more about the experience (and travails) of building the kayak, and wouldn't provide much guidance to the do-it-yourselfer. (The most relevant guidance might be to avoid the author's approach....)
