Yes cedar is a fairly brittle wood but after making 3 western red cedar (one piece paddles with yew wood tips) I can say that they are strong enough for me. The most dangerous place is getting in and out of the kayak which puts the most strain on them. If you weigh over 150 lbs then consider spruce.
